Duncan Taylor, to give its products additional complexity, allows the spirit to spend the final part of its maturation (a few months) in much smaller casks than usual: the 50-liter ex-sherry \"Octave\" casks. In these, significant evaporation occurs along with an evolution that imparts the spirit with a unique and inimitable character. On the nose, it starts reserved, then reveals attractive notes of malt and vanilla intertwined with cocoa.
