A second phase involves the use of exhausted wooden barrels that no longer release tannins. One month after the harvest, the wine is distilled in a wood-fired still, where the vapors that condense are reheated and reach the coil for final condensation. The Armagnac method does not require final dilution. The distillate immediately goes into wood for refinement.
