The pomace arrives in the facilities very fresh and dripping with must, and is processed using two pot stills operating with a bain-marie system heated by a wood-fired oven in the traditional Piedmontese ronfò style. The distillation process fully respects traditional methods, characterized by slowness and low alcohol levels, which are hallmarks of an exceptionally high-quality final product.
